Easy and delicious pumpkin soup recipe

As we entered my favourite season I believe it's time for you all to meet my favourite pumpkin soup recipe. Probably it's not a shocking news to you if you have been here with me since the beginnings that I don't enjoy spending time in the kitchen,  so of course I always look for the easiest and quickest way to make a meal.
This is why I love this soup recipe.
It's super creamy due to my favourite trick, coconut milk and it's also easy to make.

 

Every year we visit our favourite pumpkin farm @Dunhampumpkins
where we pick up some delicious and beautiful pumpkins to decorate around the house, carve them for Halloween and of course to make some delicious soup. It's soup season so it's soup time !
A Pumpkin soup is a classic, perfect to warm up even the coldest days. I actually make this recipe all the time, as it’s extremely simple, comforting, and out of this world, I promise !
Full of flavoUr AND this soup only requires basic pantry ingredients!

Ingredients

 

  • Half medium sized pumpkin
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 Butternut Squash
  • 3 carrots
  • 1 l water
  • 2 chicken stock
  • 1 can of coconut milk
  • 2 tsp maple syrup
  • 1 tsp graham masala
  • 1 tsp cinnamon
  • half tsp garlic powder
  • 1 tsp salt
  • some black pepper

For the garnish /side

  • few pieces of pumpkin seeds
  • 1 leaf of parsley
  • oven baked breadsticks ( I used Aldi ones )

Method


STEP 1

Preheat the oven.

STEP 2

Add the pumpkin , squash and the carrots:  cut into chunks, lay them on baking trays. Now drizzle some olive oil and honey on the top. Place them into the oven and bake them for about 45 mins in 180 degrees - soften and turn golden.

STEP 3

Once they are cooked completely, removed them from the oven and peel the pumpkin and the squash.

Step 4

Use a blender or a hand blender and mix them well until you get a creamy puree.

Step 5

Add the pumpkin mix into a pan. Fill the pan with some water. Add the chicken cubes and the coconut milk.

Step 6

Let the soup mix boil for some time then add the mentioned herbs to add flavour.

Step 7

Leave it on the stove until all ingredients are mixed well together. Voila ! We are ready to serve.
