I count myself super lucky that I live with a chef, as I can't stand cooking, for whatever reason, it feels like a wasted effort as it takes hours making it so you can destroy it within a couple of minutes. (I'm sorry, Carl). This is why I love healthy recipes. Super easy to make nutritious, satisfying meals in such a short amount of time.
So if you want to get away from the kitchen on this special day, but you prefer to have a nice meal at your cosy home, this recipe below is for you. I' ll show you how to cook a delicious, but also healthy dinner for Valentine's day. It is possible!
Hands up everyone who loves pizza.
Definitely me !! Two things can make me quit a diet, chocolate and pizza. So, of course, there is no better way to celebrate the day of love than with two of my favourite food, of course, a healthy option as we all living up to our New Years resolution, right? In my previous post, I shared how to make chocolate dipped strawberries ( see chocolate and fruit still a healthier alternative for Valentine's day than a bar of chocolate.)
Three medium sized strawberry covered in semisweet chocolate is about 75 calories.
But, that's enough about the dessert, let's jump in to cook the main meal first, tortilla pizzas.
Tortilla pizzas
I made two types of pizzas, the first one is an Italian style vegetarian (mine), and the other one is a chicken pesto pizza(his).
Pizza 1
Ingredients:
Tortillas Wraps (i bought one bag(contains 8 tortillas) that was more than enough for both of us)
Cooking spray -4 sprays
Tomato Pizza Topping - 4tbsp or you can use tomato purée
Fresh Tomato- 4 large slices (thinly sliced)
Olives, in Brine -6 individual olives, halved (but this is optional)
Feta cheese- small to crumble
Two teaspoons of mixed herb
Fresh basil about 9 leaves
Extra-virgin olive oil, to serve
Instructions
1) Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Spray the baking sheets with the cooking spray.
2) Lay the tortilla on the baking sheet, then spread the jar of pizza topping/tomato puree equally over the base. Place the sliced tomatoes on top and crumble some feta cheese over them. Season it with dried herbs. Scatter the olives on top.
3) Bake for 8-10 minutes. Slide the pizza on to a plate, scattered with basil leaves, and a little drizzle of extra-virgin olive oil, if you like, to serve.
Pizza 2
Ingredients:
Tortillas Wraps
Cooking spray -4 sprays
4tbsp pesto
1 cooked skinless chicken breast, shredded( 1 breast is enough for two pizzas)
1/4 cup grated Parmesan
20g wild rocket
Extra-virgin olive oil, to serve
Instructions
1) Preheat the oven to Gas Mark 6/200°C/fan oven 180°C. Spray the baking sheets with the cooking spray.
2) Lay the tortilla on the baking sheet, then spread the pesto equally over the base. Place the chicken on the top. Scatter over the Parmesan shavings.
3) Bake until the cheese is melted about 8-10 mins. Once it's cooked transfer the pizza to a cutting board or plate. Top the pizza with the rocket and a little drizzle of extra-virgin olive oil, if you like, to serve.
