Banana is one of those fruits that I always have at home. I love to use them in smoothies, top up my peanut butter sandwiches with some slices or just snack on them until they are fresh.
Yes! Fresh, green, and most definitely not ripened. I'm one of those people who cannot eat bananas as soon as they turn yellow with dark brown spots all over them.
This is why I love this recipe, perfect to use any of those overripe bananas to make a loaf of healthy banana bread. Super easy one bowl recipe with everyday use ingredients.

Banana bread is one of my favourite treat along the carrot cake. I have shared previously with you all my carrot cake recipe here.
No matter if it's a sunny day in summertime getting ready for a picnic or a cosy night next to the fireplace in winter, banana bread is something that I enjoy all year around.
It’s also great for a quick breakfast when you in a hurry next to a hot cup of coffee or tea.
As soon as the loaf was in the oven, the smell was wafting through the house. It gives a delicious aroma, the banana and the cinnamon combined together. Can't get enough of it.
A healthy banana bread recipe
Ingredients:
1/3 cup of melted coconut oil.
1/2 cup of honey
2 good size eggs
1 cup of mashed bananas ( Ripe is better- 1 cup is about 2 large bananas)
I usually buy the kids bananas, so I use 4 small ones.
1/4 cup of milk ( you can use water if you wish)
1 teaspoon baking soda (do not use baking powder)
1 teaspoon vanilla extract
Half teaspoon salt
Half teaspoon ground cinnamon
1 3/4 cups of whole wheat flour
You also can add chopped walnuts, sliced bananas, pecans or chocolate chips if you wish. Be creative!
Instructions:
1)Preheat the oven to 175°C, and grease your loaf pan.
2)In a mixing bowl ( i usually use my kitchen aid bowl ) beat the coconut oil and the honey together with a whisk. Add the eggs and beat it well with your mixture.
3)Mash the bananas with a fork until completely smooth. Now add the mashed bananas and the milk to the mix and keep whisking.
4)Add the baking soda, vanilla extract, cinnamon and salt and stir it well.
5) Switch your whisk for a spatula and stir the flour until combined. After your mix is ready added your chopped walnuts or whatever combination you picked and fold them in gently.
6)Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 175°C, or until a tester inserted into the centre comes out clean.
7) Remove from oven and let cool in the pan for about 10 minutes. Now you can remove the banana bread from the pan and allow to cool completely before serving.
(Use a bread knife to slice it, it won't make it crumbly)
